Parsley Salad – Vegan and Gluten Free

Such a simple salad but so fresh and delicious. It has some suggestion of tabouli but not gluten and the seasoning and ingredients vary. Honestly, this salad could be prepared with any combination of vegetables you prefer. This is just what I had on hand the day I prepared it. It is always a crowd pleaser and easily accompanies a variety of dishes and flavors making it quite versatile. So without further ado:
2 Bunches Parsley
1 Bunch Dill
1/2 Large Red onion
1 Bulb Fennel
3 Cucumbers
2 Lemons, juiced
2 Tbsp Olive oil (or omit, however, you please)
4 Cloves Garlic, diced
Salt and Pepper to taste
Preparation – Chop and all ingredients and place into a large mixing bowl. Add Lemon Juice and Olive Oil (optional) just before serving.
Will keep for 3-5 days in fridge
